Toasted
Coconut Cake
Ingredients:
1 white cake mix
4 eggs
¼ C. oil
1 1/3 C. water
1 instant vanilla pudding mix
1 ½ C. coconut
toast coconut for both cake and
icing
bake in 3 layers or 13 x 9 pan will
work also
icing:
1 C. chopped nuts
2 ½ C. coconut
2 T. oleo with 1 8 oz. Cream cheese
3 ½ C. sifted powder sugar
2 T. milk – add gradually to
determine if enough liquid
1 t. vanilla
refrigerate before serving
